CHEF FRANCESCA FERREYROS AT THE RISTORANTE TORRE
The Peruvian chef Francesca Ferreyors joins Fondazione Prada’s “CARE’s Chef Under 30” project at the Ristorante Torre and proposes a five-course tasting menu inspired by her country’s gastronomic identity. Trained at Iván Kisic’s kitchen in Lima, Francesca Ferreyros continues her career in the US, Europe, and Asia, returning to Peru in 2018 to work as a chef at the IK restaurant in Lima. Here she devotes herself to exploring the Nikkei (Japanese-Peruvian) and Chifa (Chinese-Peruvian) cuisines, and creates her own fusion culinary identity, which combines ingredients, techniques, and traditions from South-East Asia and Peru.
