30 chefs from 16 different countries, with 24 Michelin stars between them, have signed up for the second CARE’s Ethical Chef Days, which will take place in Alta Badia in the Dolomite Mountains from 22 to 25 January 2017.
Presented in Marchesi’s new premises in the Galleria Vittorio Emanuele II in Milan by chefs Norbert Niederkofler and Giancarlo Morelli and the promoter of the initiative Paolo Ferretti, the project aims to encourage a culture of sustainable cuisine and catering throughout the entire supply chain: farmers, producers, suppliers and, of course, chefs. This is a project devised by chefs, for chefs.
Like last time, Marchesi 1824 will support the project with a Social Responsibility Award presented to the farmer or producer who “has proven their ethical and social commitment” in their work.
As you may recall, in 2016 this award went to the farmer from Alto Adige Harald Gasser, “the keeper of rare vegetables”, who grows and conserves 400 different species.
