Thirty chefs from 16 countries covering six different continents, with a total of 24 Michelin stars between them, attended the second ‘Care’s – The Ethical Chef Days’. Marchesi 1824 supported the event through the ‘Care’s Social Responsibility Award’ and by providing a selection of its most traditional friandises to add the finishing touches to the menus prepared by the chefs.
Devised by the chef Norbert Niederkofler (St. Hubertus – two Michelin stars) and Paolo Ferretti (agency hmc) in partnership with chef Giancarlo Morelli (Pomiroeu – one Michelin star), the project brings together excellence in the field of catering and cuisine, focusing on the topics of sustainability, environmental protection, biodiversity and ethics. Over four days, 22-25 January, it incorporated workshops, cooking lessons and culinary experiences, with lunches at altitude and co-curated gala dinners, where several chefs cooked side-by-side, each presenting and sharing their own ethical projects.
This year the Marchesi 1824 ‘Care’s Social Responsibility Award’ was presented to Brandimarte Farm in Castelluccio di Norcia, renowned for growing lentils and spelt using techniques that respect nature and its cycles. The farm’s crops and equipment were completely destroyed by the earthquake that struck the region on 30 October 2016; thanks in part to the support of Marchesi 1824, the farm is now ready to start again, preserving its tradition of sustainable and environmentally friendly agriculture.
