Harald Gasser, the young farmer from Alto Adige who won the Social Responsibility Award 2016, organised in partnership with and supported by Pasticceria Marchesi 1824 as part of the Care’s – The Ethical Chef Days project, has begun to harvest his first crops of rare vegetables.
His natural, organic and environmentally-friendly growing methods help to preserve ancient techniques and generate products of the highest quality, highly sought after by top chefs and also used in Marchesi Monte Napoleone’s recipes.
The first plants harvested from Harald Gasser’s ‘maso’ includes Brassica juncea, also known as Indian mustard, a spicy plant with a flavour similar to horseradish, the seeds of which are also used to produce black mustard; Mizuna (Brassica rapa var. Nipposinica), also known as Japanese mustard, with a strong aftertaste; mini fennel, with an intense flavour and a strong aniseed aroma; and Atriplex hortensis, also known as garden orache, which has leaves with a spinach-like flavour, but slightly sweeter.
